Our Notes:
Forest Calm is a unique introduction to oolong. Oolong is a tea between green and black, made of tea leaves that have been semi-oxidized (i.e., exposed to air to dry and darken). It’s a favorite fact of ours that all true tea (i.e., not herbs like mint, lavender, etc.) comes from the same plant, Camellia sinensis. This is true whether you have white, yellow, green, oolong, red, black, or pu-erh tea. The difference comes from how the leaves are cared for and processed, the specific cultivar used, and the local environment. Forest Calm is a unique example of working symbiotically with Nature to make delicious tea. Oxidation starts before the leaves are even harvested as bugs called katydids are allowed to eat at the tea leaves, as opposed to non-organic tea farms that use pesticides to get rid of the bugs. Allowing the bugs to bite the tea brings forth a honey fragrance that gives us the type of calm we get from sitting against a wise old tree, witnessing the forest unfurl around us, and celebrating the interconnectedness of every creature.
About the Farmer
About the Farmer
Xie Yuan Zai (謝元在)
Mr. Xie Yuan Zai, a third-generation tea farmer, challenged the use of agrochemicals in tea production back in 1997 when he saw the effects they were having on his wife’s health. Knowing what these chemicals could do, he questioned selling such tea to others. To support his family during the transition to regenerative organic practices, he worked as a painter and carpenter, knowing that it was the better decision for his people and the planet long-term. He’s since formed a co-op to teach locals, including his immediate neighbors, how to shift to organic methods, with equal shares in the profits of their combined work. To us, Mr. Xie exemplifies the power of working in community to build a better world for all, and that uplifting energy comes through in every sip.
